Well... it's difficult to say wich game was the best... there are so many games...

Let's see....

Best Racing Game: GT3 (PS2) / NFS Series / StarWars POD Racer
Best Fighting Game: Dead or Alive 2 (PS2/DC)
Best RPG: Final Fantasy VII/VIII / The Legend of Zelda Ocarina of Time/ Chrono Trigger/Cross
Best FPS: Half-Life/CS/UT
Best Adventure: Monkey Island Series
Best RTS: Empire Earth and C&C series
Best Flight Simulator: Combat Flight Simulator
Best Space Simulator: Star Wars: X-Wing Alliance

I forgot another one: Tranport Tycoon Deluxe! Man I spent Months playing that game! It ROCKED :p I lost my copy and have been trying to find it again for a long time now.

There was a tycoon game when I was in forth grade that I liked where you have your own dinosaur park (Kinda like jurrasic park). Does anyone remember the name. It was my favorite game.
 
RPG: Tales of Phantasia
FPS: Day of Defeat
Racing: Mario Kart 64
Fighting: Waku-Waku 7/Last Blade 2 (Marhmallow Duel! sadly, it doesnt run for more than 5 minutes on any OS beyond Win95)
SH: Onimusha
Shooter: Starfox 64

Adventure: Zelda OoT
 
Ocarina of Time is a classic Adventure game. Many have started to call it an RPG, but for me, the Zelda series has always been the definition of an Adventure game.

I know that on a PC it would be classed as an action game, but consoles are different. Adventures and RPGs on the different systems are very different. Adventure: Monkey Island/Zelda.... RPG: Fallout/Final Fantasy.

FPS: no idea last one I played was duke nukem on my 486 so thats my vote
Racing: Gran turismo series
2D Fighting: Its a toss up, I own too many good fighters. I like almost all of the SNK and Capcom fighters. The two games that drug me into the genre were SF2 and Samurai Shodown.
3D Fighting: Tekken series
Shooter: Blazing Star
Platform: Super Mario bros
