Needless to say, you probably don't have what it takes to tackle the PS2. It is an extremely complex system to emulate and, without plenty of experience, you will not go far. Don't take offense, there are very few people with the needed skills to tackle this system. If you need to ask how to make a PS2 emulator then you for sure do not have the needed skill. Maybe you should take a look at Chip8 as it's a very easy first system to try. After that, you could probably have a look at Master System, Mega Drive etc... But, be warned, Chip8 is far simpler than any real life system.

Just for interest, you'd most definatly need assembly knowlage since the complexity of the PS2 requires the fastest possible emulation.
cheers
