I guess the question is how in depth you want to go. I don't use any "all-in-one" converters. I prefer to encode the audio and video from an avi separately. I use virtualdub to "rip" the audio track from avi file and then an appropriate program to encode it to .wav or .ac3. I use tmpegenc to encode the video from the avi file. Then I use DVDLab to make the dvd from the elementary files I encoded.

I'm sure you can find all the info you need at videohelp.
