I wanted to program some of my PC games to use the Wiimote by using Glovepie, but it's interface is confusing as heck.

I bought myself a wireless sensor bar, and bluetooth dongle with this in mind besides using it specifically for Dolphin.

Can someone help me out a bit with this?

Also what are some decent applications for the PC made with the Wiimote in mind? I know there's the whiteboard software and possibly other applications that can make use of the Wiimote on PC. Any emulators that you can map Wiimote controls to yet?

WinVice and Kega can be played with wiimotes reportedly. Unsure of the specifics.
FPS games could be easy first picks, but no idea if Steam would appreciate.
