Just use Pete's OpenGL plugin at 640x480 and Keep PSX Aspect Ratio. I used the following settings when I played FFO. There are borders like in Zsnes, but the image is not stretched and distorted. The way I like it.

Whats the best resolution to play it in full-screen mode? My moniter is 800 x 600 but it has a border on the top and bottom and squashes the graphics and it's hard to read the text and the sprites look messed up. Thanks in advance. Also I am using epsxe 1.6.0.

Sure as heck looks nice though for FF1 and 2. I guess it's more of a personal preference.
