Remake your images from your original FF8 disks using ISOBuster, CloneCD or Alcohol 120%. Each of those can make image files that are compatible with ePSXe's Run ISO command or with the Mooby2 ISO-reading CDR plugin.

Then load your image into a virtual CD drive that works with that format, and run ePSXe with a CDR plugin like SaPu.
