According to the dictionary, 'hokage' is the 'light given off by fire', or simply 'light'. An online translator also called it 'sail shadow'

The kanji on the Hokage's suit and hat reads "KA/hi" ("火"), which means "Fire"

Hokage "火影" means the shadow of the fire.

Hokage doesn't really have a literal meaning... well it DOES, but there's not much meaning of the term Fire Shadow beyond its titular purposes. As others have said, "ho" in this case means fire, "kage" means shadow. If you pay attention on the show, they explain how the top ninjas of each country are all given the "kage" (shadow) title. Hence, each kage is a "kage" of whatever their country of origin. Hokage for fire, Mizukage for water, Raikage for lightning. So the prefix is symbolic of the country of origin (and possibly the dominant style of technique... although Hokage doesn't seem as predisposed towards fire as most of the others are towards their respective elements), while the kage title makes sense, since ninjas are all about stealth and secrecy.

As for the first question, in the early episodes, they actually give animal names to each individual hand gesture. This is based on the chinese zodiac set of animals (dragon, monkey, rat, rooster, horse, etc.)... one for each month (or each year in a 12-year cycle). In theory, each animal represents certain traits and elements, so the hand gestures representing that animal should correspond to the elemental traits and qualities of whatever jutsu is being used.
